Egg-Free Chocolate Chip Cookies

Everyone I know loves a good chocolate chip cookie.  When our daughter was diagnosed with an egg allergy, I spent many hours researching recipes for baking without eggs.  I have tried many chocolate chip cookie recipes and this one is by far one of the best.  It can be made dairy and gluten free too.

Ingredients:
125 g butter (for dairy free use half Kremelta and half Olivani spread)
½ cup white sugar
2 T golden syrup
1 ½ cups flour (for gluten free replace with gluten free flour such as Orgran or Bakels)
1 tsp vanilla essense
A pinch of salt
½ cup chocolate chips

Pre-heat oven to 180°C.  Cream butter and sugar until well mixed (approx. 5 minutes) then beat in the golden syrup.  While that is mixing, put flour and baking powder into a separate bowl and whisk together (this helps aerate the flour, you can just sift it if you wish).  Once the butter and sugar has been cream, add the flour and baking powder mixture and mix together.  Lastly fold in the chocolate chips. 

Line a baking tray with baking paper.  Roll into balls (about 1 tablespoon) and place onto the tray.  Use a fork to press down a little.

Bake for about 10-12 minutes or until golden.

Makes approx. 16 cookies.
