Chocolate Coconut Eggs

Chocolate coconut Easter eggs

Want something delicious this Easter? These melt in your mouth peanut butter/coconut eggs are the perfect Easter gift.  Whether you make the eggs with peanut butter or coconut, they are delicious either way!

Chocolate Coconut Eggs Recipe


50 grams butter (softened)

½ cup cream cheese

2½ cups icing sugar

¼ tsp salt

1 tsp vanilla

1 cup peanut butter OR 1¼ cup desiccated coconut

250 grams chocolate + 2 Tbsp butter for melting

Combine all Ingredients except for the chocolate and butter

Form egg shapes or little balls and place on wax paper covered cookie sheets 

In microwave-safe bowl, melt chocolate and butter for 40 seconds, stir, melt for 30 more seconds or until chocolate is melted. Do not over cook! 

Dip balls/eggs into melted choc to cover and sprinkle with hundreds and thousands. Chill to set.  (Makes 35)
