Ooooodly Noodles

My girls love noodles, in particular udon  noodles - they are easier for little ones to eat on their own.  This recipe is quick and easy to make up and it is delicious (well at least my girls think so).  

500g  mince (any type – beef, pork, chicken will work but try to get lean mince)
½ medium onion (chopped)
1-2 cloves of garlic (chopped)
2 packets udon  noodles
1 cup frozen mixed vegetables
1 T vinegar
2 tsp light soy sauce (or more depending on your taste)
1 T oil
Pepper to season

Heat oil in a fry pan then cook chopped onions and garlic for approx. 2 minutes.  Add the mince and stir fry until cooked.  Put in the udon noodles  (note: just put it straight in from the packet, no need to pre-cook anything.  Use some tongs if you have available to loosen up in the pan while cooking).  

Once the noodles start to soften up, add the soy sauce, pepper, vinegar and frozen vegetables then continue to stir fry until veges are cooked.

Easy peasy!  If you prefer you can use fresh vegetables (e.g. broccoli, beans).  This recipe really is very basic, so be experimental and tweak it to your own liking.  You can replace udon noodles with other types of noodles too.
