Ingredients for Pink Jam Jams

150 gm butter (soft)

1/2 cup icing sugar

Pinch of salt

1 1/2 cups flour

1 tsp strawberry or rasberry essence

Pink food colouring

1/2 cup mums favorite jam

Icing sugar for dusting

Method

1. Turn your oven on to 170C. Line a baking tray with baking paper.

2.  Cream butter and sugar, add essence.

3. Mix in flour ...1/2 cup at a time then a dash of pink food colouring.  Mix well.

4. Form a large dough ball. Knead dough then roll dough out to about 1/2 cm thick.

5. Grab cookie cutter and cut out cookie shapes. With half of the cookies (lets call these the holey cookies) use a smaller cookie cutter to cut out the centers.

6. Bake for 12-15 minutes.

7. When cool, spread jam on those cookies without the holes, then pop the holey cookies on top. Dust with icing sugar.

Tip:

Whilst heart and flower cookie cutters were used here, you can have so much fun using any cookie cutter shapes. No cookie cutters? .. just use a good ol' drinking glass.
