How is this for a very different idea?  The Droog Highchair, designed by Maartje Steenkamp.  As your child gets older, you simply saw the legs off a bit to adjust the height to suit. 

I do like the fact it starts at a much higher level than standard highchairs, would save the back a bit I'm sure.  Oh, and if you're wondering, they really do include a small saw with the highchair.
